Sliced Tomatoes with Green Pepper Salsa

Ingredients:
1 cup chopped green pepper
1/4 cup chopped green onions
1 tablespoon chopped fresh cilantro
2 teaspoons seeded, chopped jalapeno pepper
1/2 teaspoon ground cumin
1/4 teaspoon salt
2 tablespoons cider vinegar
2 cloves garlic, minced
1(4-ounce) container alfalfa sprouts
4 medium tomatoes, thinly sliced
Directions:
Arrange alfafa sprouts on a serving plate; top with tomato slices. Using a slotted spoon, top with pepper mixture; drizzle with remaining pepper salsa liquid.
Enjoy!

I'm filing this recipe away for the days ahead when we can get \”real\” tomatoes. What's available now are very poor imitations and I refuse to buy them, except cherry tomotoes. Somehow, they seem to retain some real flavor in their journey from where ever to us.Best,Susan

I'm of the belief that tomatoes don't need any dressing. But if you're going to dress then, I can't think of a better topping than more fresh veggies.

I think that this might be especially good with heirloom tomatoes when they're in season over the late summer. We haven't had good luck with tomatoes lately. Even those from Mexico are a bit tough and flavorless. I like the colors of the dish. It almost seems Christmas-y.
