This is the last hurrah of summer. Finally, cooler temperatures have arrived. Just as soon as we get done drinking this mojito we will say good bye to summer. Drink up!
Pineapple Mojito
Makes 1 drink
Ingredients:
1/2 lime, quartered into wedges
6 chunks of fresh pineapple
5 mint leaves, plus 1 sprig for garnish
1 ounce simple syrup
Splash of club soda
2 ounces good quality rum
Crushed Ice
Directions:
Put the lime, pineapple and mint in a highball glass and muddle with the back of a spoon or muddler. Add the rum, simple syrup, and club soda, stir vigorously. Fill the glass with crushed ice and stir again.
Garnish with a pineapple wedge, lime and a sprig of mint.
Enjoy!

I remember at the beginning of the summer I was all ambitious and I tried to grow my own mint so I could make peach mojitos – one of my favorite drinks. Boy did I fail, because I did not make a single one. Thanks for the reminder. It's not too late yet!

I have never really like mojito's but that pineapple in them might just change my mind! That was a perfect addition to that drink! I'll have to give that recipe a try, I know my wife will enjoy them!

What? Jeez Louis, how the heck did I miss this post, Velva?! I saw a \”mixologist\” make a mojito on TV muddling everything in the bottom of the glass WITH the ice! It worked well cuz it added a bit of water to the cocktail from the crushed ice and most likely really chilled the cocktail. By the way, if you want to make mojitos, I suggest you invest in a muddler, a spoon (as the recipe suggests) does not work. It cuts into the fruit and mint and is ineffective. Wooden muddlers are about $7, don't get metal.Wish we lived closer, me likey your cocktail hour!
